Orange Cranberry Sauce: Honey and Juice Sweeteened

Our orange cranberry sauce, honey and juice sweetened is perfectly chunky, zesty and absolutely healthy. We don't use too much honey, and for this reason, our sauce is slightly tart (just pleasantly so). If you prefer a sweeter sauce, add another 1 to 2 tbsp honey. To develop the Orange Cranberry Sauce, Honey and Juice Sweetened, we made numerous batches of the sauce over two years. This version, therefore, is guaranteed to delight you wtih an amazing texture and taste. If you don't have fresh berries, you can use frozen ones. Try our Orange Cranberry Sauce, Honey and Juice Sweetened, and this will become your go-to cranberry sauce recipe!

What You Need:
 12 oz cranberries, picked and rinsed. (That's a standard bag you buy at a grocery store.) If using frozen cranberries, do not defrost! Just increase the cooking time. Unfortunately, the frozen cranberries will be less chunky than the fresh ones.
 1 tbsp grated orange zest from a (preferably) organic orange. If using a conventional orange, wash with soap and rinse well. The zest should not have any pith left on it; otherwise, the sauce will be bitter. Also, don't be tempted to use more zest than specified here, because your sauce may get bitter if you do.
 ⅔ cup apple juice. We use Martinelli's brand juice, because it's the purest.
 4 tbsp orange blossom honey. Increase by 1 to 2 tbsp if you prefer a sweeter sauce. We use only 4 tbs.
 pulp of 1/2 medium orange (all pith must be removed)
What to Do:

Bring apple juice, orange pulp and orange zest to boil in a small saucepan. Reduce heat to low and simmer for 2 minutes.

Add cranberries and return to boil over high heat. Reduce heat to low, add orange blossom honey and simmer for 5 minutes, until about 2/3 of the cranberries have burst and the sauce just begins to thicken. Stir while cooking. Note: The Orange Cranberry Sauce, Honey and Juice Sweetened will thicken more as it cools.

Serve chilled. Please note that the Orange Cranberry Sauce: Honey and Juice Sweetened tastes best the next day, when the flavors have developed.
